An original Bahay na Bato in this side of Intramuros, Manila, the Destileria Limtuaco Museum used to be a bodega before turning into a two-storey wine museum.
The oldest and still existing distillery in the Philippines (founded in 1852), Destileria Limtuaco, through its museum chronicles five generations of wine makers and preserves over a century of Filipino craftsmanship and innovation. This museum showcases the process and production of whiskeys and features a collection of items and liquors dating back to the Spanish colonization as well as the personal belongings of the four generation of owners which made the company a success until these days.
The stone house was purchased in 1979 and developed, later on, as a museum dedicated to the company’s 's history showcasing some original and miniature equipment in whiskey-making.
A brainchild of Ms. Olivia “Olive” Limpe-Aw, a fifth-generation master distiller, the museum finally opened for public viewing in February 2018, and since then has become part of the tourism must-visit in Manila as certified by the Department of Tourism.
Greeting museum guests is a dadapilan, a traditional carabao-drawn sugar cane crusher used in the early days of Philippine spirit production. Upon entering the museum, a dedicated corner fewtures Tiok Tong (Siok Hoc Tong), the distillery’s flagship product. Introduced, in 1852, by Chinese immigrant Lim Tua Co (who had to be Filipinized to be able to do business in the country and thereby changed name to Bonifacio Limtuaco).
This traditional, bittersweet, medicinal herbal wine built the company’s foundation, and is popularly known as Sioktong or Choctong. This lapad drink is still highly patronized today for it medicinal property. Also, within the display are historical bottles and original brewing herbs.
The ground floor showcases the traditional distilling process and displays memorabilia steeped in history showing, not only the various products of Destileria Limtuaco; but also a collection of bottles throughout the years; vintage, traditional oak barrels and imported white oak; and the machines they used to produce various spirits (including damajuanas).

Make it rum or whiskey?
Did you know that "alcoholic beverages" rum and whiskey do not belong to the wine category?
The distinction lies in their production process: wine is a fermented beverage made directly from fruit, most commonly grapes, whereas whiskey and rum are spirits, or distilled liquors. To create a spirit, a fermented base (the "wash") must undergo distillation—a process that concentrates the alcohol and refines the flavor—resulting in a product with a significantly higher alcohol content than wine.
Whiskey is crafted from a fermented grain mash, such as barley, corn, rye, or wheat while rum is produced from sugarcane byproducts, most notably molasses or fresh sugarcane juice, giving it a sweeter, more vegetal base profile. Both spirits often rely on barrel aging to develop complexity, their distinct "raw materials"—grain versus cane—create two entirely different sensory experiences.

Both are distilled spirits that are virtually calorie-identical when consumed neat, and both are devoid of carbohydrates, fats, and proteins. Rum is frequently paired with high-sugar sodas or tropical juices, which can lead to significant blood sugar spikes, whereas whiskey is more traditionally enjoyed neat or with water.
Both the rum and whiskey making processes are on display at the ground floor: rare vintage distillation equipment such as mini tanks for fermenting molasses and corn; working distillators and and oak barrels.
White Castle Calendar Girls
Not to be missed on display are some of the White Castle Whisky calendars. This iconic Philippine promotional campaign started in 1974 with first model, beauty queen Evangeline Pascual, followed by showbiz personalities Carmi Martin (1984), Maria Isabel Lopez (1988), Lorna Tolentino, Cristina Gonzalez (1990) and Glydel Mercado (1998).

Recent calendar bearers include celebrity chef Ninong Ry (the first male calendar model) in 2021, content creator Sassa Gurl in 2022, Ria Atayde (actress) in 2023, Angelie “Pench” Andanar (a tattoo advocate and model) in 2025, Ashley Rivera (aka internet personality Petra Mahalimuyak) in 2026.
Interestingly, the concept - - a woman wearing red bikini, riding on a horse on the beach with a castle for a background–-came to Julius Limpe, Olivia’s father, in a dream and, upon waking, he sketched it, and this became the inspiration for the brand’s storyboard.
The second floor exhibits company permits throughout the years and even their old cashier, dial-up phones, cameras, cash registers, typewriters and family memorabilia such as old photos; newspaper clippings; furniture (office desk, rocking chair, the wooden dresser of Teh Siu Yong Limpe, grandfather clock, etc.); the paintings of Julius Limpe, Olive’s father; brand evolution booklets (tracing label changes over 166 years); and awards of her lawyer-mother Ms. Lily Cheng-Limpe.
The woman distiller and worldwide accolades for modern spirits
The woman behind the museum, Olivia, decided to turn the stone house into a family gallery after a visit to a wine museum in Germany realizing the rich heritage of her family.
In 2020, she was named among Forbes Asia’s Power Businesswomen, praised for expanding the brand internationally while preserving its 170-year legacy. More recently, in 2024, she received the Outstanding ASEAN Women Entrepreneur (AWEN) Award, acknowledging her contributions to regional business excellence.
Olive has also developed her own brands. Julius James, a whiskey made purely from corn dedicated to her grandfather and father, is a collector’s item currently prized at Php 3000 per bottle.
Her well-crafted liqueurs such as Mango Rum Liqueur, Manille Liqueur Calamansi, Manille Liqueur Dalandan, Amadeo Coffee Liqueur, and Intramuros Liqueur de Cacao are best-sellers and award-winners.
Intramuros Liqueur de Cacao, a rich chocolate spirit, inspired by traditional tablea tsokolate from 100% roasted local cacao from Davao, recently won World's Best Chocolate Liqueur at the World Drinks Awards 2025.
Two other products also received top honors: Manille Liqueur de Calamansiwas named Country Best Fruit Liqueur – Gold, andAmadeo Coffee Liqueurearned Country Winner for Best Coffee Liqueur – Gold.
Olive’s children, namely, Clifford, Aaron and Brandon, are now also helping out as the sixth generation of master distillers.
Indeed, the spirits live on as the Destileria Limtuaco Museum continues sharing with the public the journey of all these iconic and more Filipino brands to come.
